Unsmoked Gammon joint

A Real Crowd Pleaser and full of Flavour

Our tasty Unsmoked Gammon Joints are cut from the leg of pork, they are then lightly cured to add a lovely succulent flavour. Gammon can be cooked in many different ways, with lots of families having their own traditions. Some love to boil in water and finish rasting in the oven, some like to use pure orange juice or cider, then rolled in breadcrumbs and baked to finish it off. How about using dark fruits cider for a different twist to a traditional dish. A gammon joint lasts for a good few days after cooking and they’re delicious hot or cold. Great for having in the fridge for the family to carve as and when they fancy a quick snack or as part of a quick mid week meal such as ham egg and chips.

Cooking tips

Rinse the ham in cold water and leave to soak for at least an hour.
Preheat your oven to 150°C.
Pour 900ml of a liquid of your choice over the gammon then cover tightly with tin foil, making sure all edges are sealed to keep in the moisture.
Bake in a preheated oven 150°C. Leave in the oven for 5 to 6 hours, checking each hour to make sure the ham is not cooking dry. If you notice the ham drying out, add a glass of water to the base.
Pierce the cooked ham with a fork, the meat should pull away with very little pressure.

To Glaze:
Create a rich glaze by simmering 150g dark muscavado sugar, 100g English mustard and the juice of two oranges over a medium heat until rich and glossy.
Whilst the gammon is hot peel away the skin gently to expose the layer of fat covering the joint, then brush with a coating of the glaze.
Place back into a preheated oven at 200°C for 15 to 20 minutes.
Be careful to avoid the glaze burning, as this can happen quickly due to the high ratio of sugars in the glaze.
Remove from the oven cover and leave to cool.
